- Description Xylitol is a carbohydrate found in hardwood trees, several kinds of fruit, as well as corn. It has a chemical structure that looks like a cross between a sugar and alcohol but it is neither. It's nearly as sweet as sugar (sucrose) but has fewer calories. Some diabetics use xylitol as a sugar substitute as blood sugar levels tend to stay at a more constant level with xylitol than with regular sugar because it is absorbed more slowly by the body. Many oral care products contain xylitol since mouth bacteria use xylitol as a source of energy and thus may prevent tooth decay.
