• Description Dried raw sumac spice is purplish-brown with a gritty texture and tastes tart and acidic, but less so than lemon. Sumac is used in everything from dry rubs, marinades, and dressing and is delicious sprinkled over salads, on hummus, or rice. It is a widely used spice in Middle Eastern and Mediterranean cooking and is the key ingredient in the spice blend Za-atar.
